Recipe: Traditional Christmas Cake Kits Available From Hey Whey

Want to make your own Christmas cake this year, but don't have the time to shop for all the different ingredients? Head to Her Whey in Ryde, where you can purchase kits with almost everything you need, measured out for you.

You'll just need to add 200ml of orange juice, 150ml of brandy, rum or tea (plus extra for feeding), 4 eggs, 2 tsp vanilla extract and 200g unsalted butter.

INGREDIENTS

Bag 1: 250g soft dark brown sugar, 2 tsp mixed spice, 1 tsp ground cinnamon
Bag 2: 175g organic plain flour, ½ tsp bicarbonate of soda, pinch of organic salt
Bag 3: 100g ground almonds
Bag 4: 100g mixed nuts
Bag 5: 500g mixed fruit (includes raisins, currants, sultanas, mixed peel)
Bag 6: 200g glace cherries (chop as desired), 1 orange to use as extra zest or fresh orange juice

METHOD

1 Put the dried fruit, orange juice & brandy (or alternative) into a container, stir and leave overnight.
2 Heat the oven to 300F/150C/140C fan/ gas mark 2.
3 Line a deep 20cm cake tin with a double layer of parchment paper, making sure it comes at least 3cm above the edge of the tin. Then wrap a double layer of newspaper or brown paper around the outside, tying it with string (this helps stop the fruit burning) Add a circle of foil on top of the mixture but poke holes in it to allow the steam to rise.
4 Cream the butter, sugar & vanilla extract together in a large bowl. Add the eggs in one at a time and stir until well combined.
