Spoil Mum with a Mother's Day Brunch Board

This mouth-watering brunch board will earn serious brownie points on Mother’s Day.

It’s easy to prepare – and really has the wow factor! Simply grab the biggest wooden board you can find, lots of colourful fruits and a variety of breakfast favourites.

Serves 2-4

HERE’S WHAT YOU COULD INCLUDE:

  • Smashed avocado
  • Crispy bacon
  • Smoked salmon
  • Breakfast muffins
  • Croissants
  • Pan Au Chocolate
  • Strawberries
  • Raspberries
  • Blueberries
  • Grapes
  • Sliced oranges
  • Blackberries
  • Kiwi
  • Melon
  • Mango
  • Maple syrup
  • Muesli
  • Fruit juice or Bucks Fizz

There’s no right or wrong way to display your brunch board. But we recommend scattering the different coloured fruits around the board.

FLUFFY AMERICAN PANCAKES

INGREDIENTS
135g plain flour
2 tbsp caster sugar
1 large beaten egg
1 tsp baking powder
½ tsp salt
130ml milk
2 tbsp melted butter or olive oil, plus extra for cooking

METHOD
1 Mix all the dry ingredients in a bowl.
2 Whisk the wet ingredients in a separate bowl, then add the dry ingredients to the wet ones and mix and stir until combined. Let the batter sit for a minute or two.
3 Heat oil or butter in a hot pan and once hot, drop two or three tablespoons of the batter for each pancake, making sure the pancakes do not spread out. Cook for a minute, until fluffy. Flip, and cook on the other side for another minute.
