Vicky’s Chocolate Brownies
Ingredients
225g plain flour
1 tablespoon vanilla extract
500g caster sugar
375g quality dark chocolate
6 large eggs
375g soft unsalted butter
1 teaspoon salt
35cm x 25cm x 5cm tin
(approximately 48 servings)
Method Preheat oven to 180C. Line Brownie pan with foil or parchment. Melt butter and chocolate together. Beat eggs with vanilla and sugar in a bowl. Mix flour and salt in another bowl.
After the chocolate mixture has melted, let it cool a bit before beating in the eggs and sugar, then add the flour mixture. Beat to combine mixture smoothly then scrape out into the lined pan.
Bake for about 25 mins, until the top is a paler brown speckle, but the middle is still dense dark and gooey. Beware, it’s easy to overbake!
