Spiced Pumpkin Pie
Ingredients:
Pre-made pastry for 9-inch pie
2 cups cooked pumpkin puree
1/2 teaspoon salt
1 cup brown sugar
2 tablespoons molasses
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 teaspoon ground cinnamon
1 cup orange juice
3 eggs, beaten
Method: Line a pie plate with the pastry. Beat together the pumpkin, salt, sugar, molasses, spices, and orange juice in a bowl. Taste and add more spices, if required. Beat in the eggs. Pour the filling into the pie crust. Bake in a pre-heated 400° oven for 15 minutes. Reduce heat to 350° and continue to bake for approximately 45 minutes, or until a knife inserted in centre comes out clean. Serve at room temperature with whipped cream.
