Sausages with Onion Gravy & Sweet Potato Wedges

Ingredients
2 medium sized sweet potatoes,
4 pork and apple sausages,
1 large onion,
Olive oil,
Melted butter,
Balsamic vinegar

Serves 2

Method: Slice the onion thinly and cook the slices gently in a little olive oil and melted butter over a gentle heat, stirring regularly for about 40 minutes. Stir in a spoonful or two of balsamic vinegar, season with black pepper and cook for 10 minutes more. Put to one side and pre-heat the oven to 200c. Cut the sweet potatoes into wedges and place in a roasting tin. Drizzle over 2 tablespoons of the oil and toss the wedges to coat. Roast for 40-45 minutes. Fry the sausages in a pan and cook for approximately 20 minutes, turning regularly. Drain off any fat from the sausages and add the fried onions, with about 100ml water. Stir well then heat through. Sprinkle the wedges with a little salt and serve with the sausages and gravy.
