French Onion Soup

Ingredients
3 tbsp olive oil,
4 large white onions thinly-sliced,
3 garlic cloves peeled and chopped,
1 tsp salt, 1 tsp dry mustard,
Pinch of dried thyme,
600ml vegetable stock,
2 tsp soy sauce,
1 glass of red wine, 1/2 tsp white pepper,
6 slices of thick white bread (cut into squares),
280g grated Gruyère cheese.

Serves 6.

Method Heat the olive oil on a medium heat. Then add the onions, garlic and salt and cook for 10 mins, stirring occasionally. Add the mustard and thyme. stir well and simmer over a very low heat for 35 mins. Add the vegetable stock, soy sauce, red wine and white peppers. Simmer for another 10 mins. Ladle the soup into ovenproof bowls and top with bread squares followed by the grated Gruyère cheese. Place the bowls under the grill in order to melt and brown the cheese and bread squares.
