Bubble and Squeak Recipe
December Recipe from The Real Island Food Company
The name may be a mystery, but this is a traditional way to use up left over vegetables after Christmas dinner.

Ingredients:
454g of cold mashed potato, or freshly prepared mashed potato
250g leftover Brussels sprouts, cabbage, kale, peas, carrots or other vegetables, chopped
1 leftover leek, chopped, or 1 small onion oil for shallow frying salt and pepper to taste

Method:
If you are using leftover pre-cooked mashed potato and vegetables, simply combine them together in a bowl until they will form burger-sized patties. If you are using fresh vegetables, cook and mash the potatoes with a little butter and a dash of milk or water and simmer the green vegetables until they’re tender, then follow the same method above.
Heat a small amount of cooking oil in a frying pan and fry the Bubble and Squeak patties in batches until they’re golden brown all over and steaming hot! Lovely served on their own or as a side dish.
